About the course
This course develops your ability to provide food and beverage services using safe preparation, professional service and basic cost control. Learning combines technical study with practical tasks relevant to Southern African organisations and communities.
What you'll learn
- Follow hygiene and safe working procedures during food handling.

- Evaluate portioning, timing, customer service and resource use.
Requirements
- Prepare to follow practical instructions, use basic measurements and keep a simple record of your work. The facilitator will introduce the tools and safe working procedures used in each activity. Check the provider's published admission requirements before enrolment.

Stage 1: Foundation knowledge and safe practice
- Food Hygiene and Kitchen Safety. Build foundation skills in food hygiene and kitchen safety. Guided examples introduce personal hygiene and cross-contamination, followed by practice with cleaning and temperature control. You will complete a supervised task, explain your choices and use kitchen hazards and safe storage to review the result.
- Ingredients, Nutrition and Storage. Build foundation skills in ingredients, nutrition and storage. Guided examples introduce ingredient groups and nutrient roles, followed by practice with quality indicators and storage conditions. You will complete a supervised task, explain your choices and use stock rotation and waste reduction to review the result.
Stage 2: Technical subjects and guided application
- Kitchen Tools and Basic Measurements. Build foundation skills in kitchen tools and basic measurements. Guided examples introduce kitchen utensils and equipment care, followed by practice with mass and volume. You will complete a supervised task, explain your choices and use recipe scaling and measurement checks to review the result.
- Food Preparation Methods. Build foundation skills in food preparation methods. Guided examples introduce ingredient preparation and cooking-method principles, followed by practice with recipe sequence and supervised cooking. You will complete a supervised task, explain your choices and use quality checks and safe holding to review the result.
- Menu Planning, Portions and Costing. Build foundation skills in menu planning, portions and costing. Guided examples introduce menu balance and customer needs, followed by practice with portion sizes and recipe quantities. You will complete a supervised task, explain your choices and use cost calculations and pricing basics to review the result.
- Food Presentation and Customer Service. Build foundation skills in food presentation and customer service. Guided examples introduce plating and garnishing, followed by practice with serving sequence and customer communication. You will complete a supervised task, explain your choices and use dietary requests and feedback to review the result.
Stage 3: Enterprise and integrated proficiency
- Small Enterprise Records and Customer Communication. Study the development of a viable small enterprise from a defined customer need. Guided practice centres on a small-enterprise plan and test record, drawing on customer problems and enterprise opportunities and products, services and value propositions. You will record findings, justify decisions and check whether the financial assumptions and customer evidence support the proposal.
- Food Preparation Skills Proficiency. Demonstrate the practical skills developed across the programme. Tasks integrate ingredients, nutrition and storage, kitchen tools and basic measurements within an agreed work brief. You will prepare resources, carry out the authorised task and check the result. Your evidence should show consistent performance, accurate records and an explanation of decisions within your learner role.
Assessment and practical learning
- Suggested learning checks: explain a procedure, complete a short task and respond to practical questions.
- Suggested practical assessment: demonstrate the skill under supervision and keep a record of completed work.
